Yes, weddings were great, and she's looking forward to even being a bystander just by virtue of being on the train too, but if they could have a second wedding.... Why not? It wasn't like it changed anything from what she intended by having the first wedding. In the end, they'd been married in their own way long before Vegeta was legally an Earthling and they were legally recognized as such.
