It seems like he's been trying to write down stuff after asking around among the locals, feeling like there was absolutely no way he was going to remember everything that he's been told here. And he's not going to be the idiot who will let some important information slip by, just because he forgot! Nope siree!
Not to mention that he's been writing down a list of tasks. As if Inigo has just vowed to try and do everything he can. He's only some organisational talent - or the lack thereof, really - away from putting it into a time schedule.. O-Overworker, who? Certainly not Inigo. Certainly not a trait he got from his adoptive dad through osmosis.
But rather than directly answering the other's question, all Inigo asks when he turns his head in Roland's direction is: "Father, what do you think a chinchilla tastes like?"
